Curried Apple Soup

Yet another way I've discovered of using up our Autumn apple glut.

Ingredients
12oz cooking apples, cored, peeled and chopped
1 onion, sliced
2 oz butter
2 tsp curry powder
3 pints light chicken stock
1 tsp sugar
Salt & pepper

Fry the onion in the butter until soft and golden. Add the curry powder and fry for 5 minutes. Add the apple and fry over a low heat for another 5 minutes. Add the stock and seasoning and bring to the boil. Simmer for 30 minutes until the apple has become pulpy.

Liquidise, cool and serve chilled.
