Bean Sausages

I prefer these to proper sausages, but then I really like beans... :-) I usually use kidney beans, but just use whatever you like or whatever you have.

Ingredients
3 cups cooked beans, drained and ground
1 cup soft white breadcrumbs
1 tsp dried sage
1 tsp salt
¼ tsp pepper
1 large garlic clove, minced
2 eggs
2 tbsp water
about ¼ cup whiloewheat flour
oil

Combine ground beans, breadcrumbs, seasonings and 1 egg. Form into sausages about 3" long and ½" thick. Beat the remaining egg with the water. Place the flour on a plate. Dip each sausage in the egg and then roll in the flour to coat.

To cook, heat enough oil to generously cover a large skillet and sauté the sausages, shaking to brown on all sides. Or place in a flat pan, drizzle lightly with oil and broil for about 5 mins on each side until nicely browned.
