Chat Masala

A sand-colored spice blend from India that is traditionally sprinkled on fresh fruit and other snacks.

Ingredients
2 tbsp cumin seeds
2 tsp fennel seeds
2 tsp dried mint leaves
1 tbsp garam masala
1 tbsp mango powder
1 tbsp black salt
1 tsp ground red pepper
1/8 tsp ground asafetida (optional)
1/4 tsp ground ginger

Dry roast the cumin and fennel seeds in a skillet over moderate heat until aromatic. Grind the cumin, fennel and dried mint leaves to a powder in a spice grinder. Add the garam masala, mango powder, black salt, ground red pepper, asafetida and ground ginger. Mix well. Store in an airtight container for about 3 months.

Yield: approximately 6 tbsp
