The $250 Cookie

A variation of the famour (urban myth) $250 Neiman Marcus cookie. This version was published in the Sep/Oct 1998 edition of "Cook's Illustrated".

Ingredients

1 cup rolled oats, ground in food processor or blender until very fine
1 cup all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
4oz butter, softened
1/2 cup dark brown sugar
1/2 cup sugar
1 large egg
1/2 tsp vanilla extract
6oz chocolate chips
1/2 cup dessicated coconut
2oz dark chocolate, finely chopped
1/4 cup walnuts or pecans, chopped

1. Adjust racks to upper and lower-middle positions and heat oven to 350C. Line two large cookie sheets with parchment paper and set aside.

2. Whisk ground oats, flour, baking powder, baking soda and salt in medium bowl.

3. Either by hand or electric mixer, beatbutter, brown sugar and granulated sugar until light and fluffy.Scrape sides of bowl. Add egg and vanilla extract; continue beating until combined. Add dry ingredients and beat at low speed until just combined. Add chocolate chips, coconut, chopped chocolate, and nuts; stir to combine.

4. Roll into balls using one or two tablespoons of dough (depending on how big you like your cookies). Place on baking sheets covered with baking parchment leaving 2 inches between each ball of dough. Cook until edges begin to crisp, but centres are still soft. Cool for one or two minutes on the baking sheets and then transfer to a cooling rack.
