An "original" San Francisco recipe.

Ingredients
1 lb ground beef
1 small onion, chopped
1 pkg frozen chopped spinach, thawed
¼ lb mushrooms, sliced (or a small can)
6 eggs, well beaten
3 tbsp olive oil
Salt and pepper to taste
Oregano to taste
Cayenne pepper to taste		 Sauté ground beef, onion and mushrooms in olive oil. Drain excess fat. Mix in spinach. When all is hot, add eggs and stir until eggs become firm. Serve with ketchup, if desired

Sherry's Special : Substitute bulk Italian sausage for the ground beef. Add basil to taste.

Makes 4-6 servings.
