Leftovers Curry

A curry made from the leftovers of Sunday's Roast. I never make two the same so this recipe is only a guide.

Ingredients
Leftover roast meat and vegetables
1 small Onion
1 tbsp Curry Powder
14oz tin tomatoes
½ tbsp Worcestershire Sauce
2 tbsp Malt Vinegar
½ tbsp Fish Sauce
2 tbsp Tomato Pureé
2 tbsp Vegetable Oil
1 tbsp Chopped Dried Coriander
Finely chop the onion and fry it in the oil for a minute or two. Add the curry powder and continue frying for another minute.

Add all of the remaining ingredients except the meat and vegatables. Bring up to a simmer and simmer, covered, for about 30 minutes.

Add the meat and vegetables. Add water if it seems to dry. Cover and simmer for another twenty to thirty minutes.

This recipe is really just an idea and should be used as a basis for experimentation. If you happen to like it as it is, then enjoy !
