Beef Orlando

A good spicey casserole.

Ingredients
½ lb cubed braising steak
2 oz dripping and a little oil
14 oz can chopped tomatoes
1 lb sliced onions
2 tsp curry powder
2 - 3 tbs tomato pureé
1 tbs vinegar
2 tbs apricot jam
¼ pt beef stock
Salt and pepper
2 bay leaves

Melt the dripping and oil in a large pan and fry beef and onions.

Add chopped tomatoes and tomato pureé. Next add curry powder, apricot jam and vinegar. Stir well. Add beef stock, seasoning and bay leaves.

Bring to the boil, then transfer to a casserole dish with a lid on. Place in a preheated oven, gas mark 3, for 1½ - 2 hours.

Delicious served on a bed of rice or jacket potato and green beans.
